Ingredients for the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Place all the ingredients inside a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the burner and let it to reach room temperature completely. Transfer into an sterilised bottle, cap it and store in the refrigerator, it will last for up to a month.
Preparing the Batch Mix: Mix the specified liquids in a large bottle, allow it to infuse for an hour, then pass it through best through cheesecloth, so it's completely strained.
To serve: Measure 85ml from the premix into your cocktail shaker containing ice, and stir lightly for a minute to cool it down. Pour into an frosted cocktail glass or similar, decorate with some cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
